Zucchini Pie (they’ll never know it’s not apple!!)

6 cups zucchini, seeded, sliced and boiled till just tender. Drained well.
1 1⁄2 cups sugar
3 Tbls cinnamon
1 tsp nutmeg
1 tsp salt

Double pie crust (I prefer Pillsberry roll up crust)

Combine all ingredients and adjust sugar and cinnamon to taste. Place in pie crust. Bake at 400 degrees for about 25 minutes or until crust in golden brown.
