Spring Morning Casserole

Prep Time: 25 minutes

Bake Time: 40 minutes, oven at 350°

Ingredients

  • 2 cups fresh cut up asparagus (1″ pieces)
  • 1 small sweet red pepper, chopped
  • 1 small onion, chopped
  • 3 Tbsp. butter
  • 8 cups cubed day old French Bread
  • 1 cup cubed cooked ham
  • 2 cups (8oz) cheddar cheese, shredded
  • 8 eggs beaten
  • 2 cups 1% milk
  • 1/3 cup honey
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

Using a large skillet, sauté asparagus, pepper and onion in butter until tender. Set aside. Place bread in 9×13 pan. Layer ham, 1 cup cheese and vegetable mixture. Sprinkle rest of cheese. Combine eggs, milk, honey, salt and pepper. Pour over top. Cover and refrigerate overnight. Remove from fridge 30 minutes before baking. Bake uncovered.
