Roasted Sweet Potatoes with Smoked Paprika

4 to 5 sweet potatoes
3 to 4 T olive oil
salt and pepper
smoked paprika

Use vegetable peeler to peel sweet potatoes, trim odd-shaped ends to make as much of a box-like shape as possible.  Cut into “oven fries” wedges — approx 3″ long, 3/4″ wide, 1/2″ thick.  In large bowl drizzle olive oil and stir sweet potatoes to coat evenly.  Sprinkle salt, pepper, and smoked paprika to your personal liking.  On a parchment paper lined cookie sheet, arrange sweet potatoes in a single layer.  Bake 400 degrees, 20 minutes.  Turn wedges over and bake another 15-20 minutes.  I prefer to bake a little longer or turn on the broiler for a few mintues in order to caramelize and get some of the burnt edges.
