Rhubarb Cake

Rhubarb Cake

3/4 c sugar
1 egg
1 tsp vanilla
1 c rhubarb, cut up
1/4 cup melted butter
1/2 tsp soda
1 c flour
1/2 c buttermilk or sour milk

Mix together and pour in greased and floured 8×8 glass baking dish.  Sprinkle mixture of 1/4 c sugar and 1/2 tsp cinnamon over batter and bake at 350 for 30 min. until done.  Cool completely.  Cover tightly with plastic wrap and store in fridge.
