Hot Vegtable Mixture

Ingredients

  • 2 zucchini (shredded)
  • 4 carrots (shredded)
  • 1 /2 onion (finely chopped)
  • 2 cups cauliflower (finely chopped)
  • 2 cups broccoli (finely chopped)
  • 2 tsp. leaf basil
  • 1 tsp. garlic powder
  • 1 green pepper (chopped)
  • 2 plum tomatoes (chopped)
  • 4 garlic cloves (minced)
  • 1/2 cup chicken stock
  • 1/2 tsp. onion powder
  • 1 Tbsp. low salt soy sauce

Directions

Sauté vegetables in stock in large skillet until soft. Add basil, garlic powder, onion powder, and soy sauce. Cook 5-10 minutes at medium heat.

Spring Morning Casserole

Prep Time: 25 minutes

Bake Time: 40 minutes, oven at 350°

Ingredients

  • 2 cups fresh cut up asparagus (1″ pieces)
  • 1 small sweet red pepper, chopped
  • 1 small onion, chopped
  • 3 Tbsp. butter
  • 8 cups cubed day old French Bread
  • 1 cup cubed cooked ham
  • 2 cups (8oz) cheddar cheese, shredded
  • 8 eggs beaten
  • 2 cups 1% milk
  • 1/3 cup honey
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

Using a large skillet, sauté asparagus, pepper and onion in butter until tender. Set aside. Place bread in 9×13 pan. Layer ham, 1 cup cheese and vegetable mixture. Sprinkle rest of cheese. Combine eggs, milk, honey, salt and pepper. Pour over top. Cover and refrigerate overnight. Remove from fridge 30 minutes before baking. Bake uncovered.

Greek Tomato Salad

Ingredients

  • 4 fresh tomatoes (chop)
  • 1 cucumber (chop and peel)
  • 1 green bell pepper (cut into 1/2 inch sizes)
  • 1/2 cup chop red onions
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. extra virgin olive oil
  • ! tsp. salt
  • 1 Tbsp. chop fresh oregano
  • 1/4 cup Kalamata Olives
  • 1/2 cup feta cheese, crumbled

Directions

  1. Mix together vinegars, oil, salt and oregano
  2. Add the rest
  3. Marinate in fridge for 2 hours. Serve

Broccoli Gold Salad

Combine with whisk in heavy bottom sauce pan:

  • 1 egg plus 1 egg yolk
  • 1/2 cup sugar
  • 1 1/2 tsp. cornstarch
  • 1 tsp. Dijon mustard

Combine and add to above mixture:

  • 1/4 cup vinegar
  • 1/4 cup water

Directions

  1. Cook on medium heat, whisking constantly, until mixtures thickens.
  2. Remove from heat. Stir in 3 Tbsp. butter and 1/2 cup mayo. Chill
  3. Combine ingredients below and toss with chilled mixture. 10-12 servings
