Columbian Beet Salad

3 – beets, boiled, peeled and diced in 1⁄2” cubes
3 – russet potatoes, boiled till just done and diced in 1⁄2” cubes
1⁄2 head cabbage
1 – lime

Shred cabbage like you would for cole slaw. Carefully mix in beets, potatoes, salt, pepper, and juice from one lime. Cover and chill for 1- 8 hours and serve. Salad will be a great purple color. Great for hot days!
